The Rise of Cheesetella
Cheesetella is a little counter in Buena Park devoted to one beautiful thing: the slow, careful bake of Japanese castella sponge cake. Each loaf rises tall and jiggly, with a tender crumb and gentle egg aroma. We fold in housemade cream, sharp cheddar, and dark chocolate, whip up airy souffle cheesecake, and pour Vietnamese condensed milk coffee strong enough to stand up to it all. Small batch, baked daily, and built for sharing.
